Thai Spiced BBQ Chicken
Serves 6
Ingredients:
1 lb chicken tenderloin pieces
1 tbsp fresh lemon grass, chopped
2 tbsp fresh lime juice
2 scallions, chopped
2 cloves garlic, finely minced
1 tbsp freshly grated ginger
2 tsp Thai sweet chilli sauce
Instructions:
In a bowl, combine the lemon grass, lime juice, scallions, garlic, ginger and sweet chilli sauce.
Place chicken pieces in a shallow dish (Pyrex or glass) and pour over the marinade. Cover with wrap and refrigerate for at least 2 hours.
Heat up the BBQ. Drain and reserve the marinade. Grill the chicken pieces on a hot BBQ on each side until golden brown. Continue brushing the chicken with the reserved marinade.
Cooking time should be about 3 minutes for each side.
