Arugula Pesto
Yields about 1 cup
Ingredients:
2 cups of packed arugula leaves, stems removed
cup fresh Parmesan cheese
cup walnuts, chopped
cup extra-virgin olive oil
2 cloves garlic, peeled and minced
Salt
Instructions:
Place all ingredients (except olive oil and Parmesan cheese) into a food processor. Slowly drizzle in the olive oil, while at the same time pulsing the mixture. Remove from the food processor when the right consistency is achieved, place the mixture into a bowl and stir in the cheese.
