Butternut Squash Pasta
Serves 4 as a side dish
Ingredients:
1 butternut squash, peeled and diced
1lb penne pasta
1 pack feta cheese, crumbled
1 jar of ready-made red pesto
Olive oil
Instructions:
Preheat the oven to 350 Fahrenheit.
Place the butternut squash chunks on a roasting tin and roast with a splash of olive oil for about 45 minutes.
Meanwhile, cook the pasta according to package instruction. Drain. Add the baked butternut squash, crumbled feta cheese and stir in the pesto.
